Beet and Cheese Latkes for Chanukah

If you love beets and goat cheese as much as I do, then check out Miriam Szokovski's recipe for Beet Latkes Stuffed with Goat Cheese.

Why latkes for Chanukah? As Mrs. Szokovski says, "Because of the miracle of oil, it's traditional to eat fried foods such as latkes and sufganiyot (doughnuts)."

But you don't have to be Jewish to enjoy these treats. :)
